Would you be selling a set of spreadsheets that link to eachother, using each spreadsheet like an app screen / web page? What subjects would you be teaching?
Yes that sounds all good. Consider thinking about a helpful checklist of videos to watch, a curated list with extra information and quizzes too. A sheet with a list of videos is fairly basic to make. Add to that the interactivity of a spreadsheet and you can do a lot of things to add educational value to any set of curated videos.

There are some things that people put into Addons that are calling an outside, or 3rd party server. Those things you can't replicate on apps script only. You would need the external server.
